Day 10

The Crock Pot



I would like to thank this wonderful appliance for making hearty homemade meals so easy and delicious. I can cook up a wonderful lasagna without precooking the noodles. Also, I can set it up in the mornings and not really worry about dinner until later. And, it's only one dish to put into the dishwasher! Beautiful!

Here is a recipie that my momma shared with me to the lasagna. I find it very very good.

Slow Cooker Lasagna

Ingredients

8 Lasagna noodles, uncooked
1 lb Ground beef
1 t Italian seasoning
1 20-oz Jar spaghetti sauce
1/3 c Water
15 oz Ricotta cheese
2 c Shredded mozzarella cheese

Preparation

Break noodles to fit in pot. Place half of the noodles in bottom of greased slow cooker. Brown beef and drain. Stir Italian seasoning into meat and spread half over the noodles in cooker. Layer half of the sause and water, half of the ricotta cheese, and half of mozzarella cheese over beek. Repeat layers. cover and cook on low heat for 5 hours.

I like to add thawed-frozen spinach, sauted mushrooms, olives, green peppers and whatever other lasagna-friendly veggies I have on hand.

This is really good to make up after church. Just cook on low for 1 hour, high for 1 hour and then on low for the remaining time. Watch it though, cuz it may burn. Or that could just my cooker.

Day 9

Bug Repellent


Ahh, what a wonderful thing when you live in mosquito-ville. Granted in order for it to be effective, one must apply it BEFORE entering the hazardous zone. On Saturday we went to see the Dixon Gallery and Gardens in Memphis. I learned my lesson about those pesky flying devils. I applied the devil-deterrent before walking around a lake on Monday and VOILA!! no bites!! It's amazing. Thank you SC Johnson for providing us with this miraculous product to prevent us from going itch-crazy.

Vacation

I have been on "Vacation" the past few days. So there hasn't been any gratitude blogging. give me another day or so to get back into gear and I'll make up for it....as a teaser (and more as reminder for myself) these are the subjects coming up:

Day 8

Yesterday and today my order from Deseret Book arrived! I am so happy! Like many others, I love to recieve not only mail, but packages! I got lots of things in my packages, all for less than $30!! Yea, for the clearance section! Brady got a BYU board book and two others. I got a wooden piece that says "family" and has four spots for pictures and four hooks to hang something with. Three CDs and some temple pictures for a craft project (inspired by April's christmas gift a few years ago) . It makes me feel as if I just took ten trips to the good ole bookstore back home. I can almost smell those Lion House rolls now....

Day 7

Healthy Body
Now, I may not be the most fit and trim me I have ever been, but I am healthy. Aside from the crazies, I have no major health issues. I don't need to wheel around an oxygen tank to be able to breath. I don't need a handicap symbol to park close because I can't walk. My cocktail of pills I take don't sustain my life, they enrich it. They make sure I get some vitamins in every day so that my baby get his vitamins too. One makes me not-crazy, and the other helps keep our family how it is until a future date. My hands work so that I can type. My arms are strong so I can carry a growing baby in a car seat. My hips are wide so I can hold that growing boy on them with one arm. My legs are strong so I can move the sofa and vacuum all the little nasties out from underneath it. I'm not going to get specific, but all my insides work too. So yes, while I may not be the "perfect size 6 (or size 8...or 10....)" I am healthy and God has blessed me such great fortune.

Day 6

A Cool House
I don't mean awesome. I cannot imagine living without air conditioning. It's been pretty hot here lately, but I'm usually not aware of it because I stay sheltered in my nice cool house. It's wonderful to have a place of shelter from the heat and cold. I am really blessed to have such comfortable surroundings. Thanks Carl, for helping to make it possible.
