Day 11

God's Creations

As previously mentioned, Saturday we went to the Dixon Gallery and Gardens. Also, on Monday we went to Craighead Forrest Park. They have a trail around a lake and some playgrounds to play on. It was pretty neat. The best part was seeing all of the wonderful things Heavenly Father created for us to enjoy. There were delicate blooms, grand trees, playful ducks, curious geese and shy turtles. Thinking about all of these things makes my heart melt all over again. Can you imagine the beauty of the Garden of Eden? No weeds and everything just grew perfectly. I think I'm going to have a garden like that if I get to heaven.

Return of the Mohawk!!!

Brady lost 98% of his newborn hair and has been slowly growing it back. I almost bought the kid some Rogain. Today I found I could put his hair in a Mohawk again!! Yea!!! Don't worry, conservatives, I don't do this for Sunday. Now he just needs some black onesies and super huge jeans with a wallet chained on and in his back pocket.

And the little one said "Roll Over"

Here it finally is, Brady rolling over from his tummy to his back. He mostly goes over the right side, but is now testing the left. His face gets all concentrated while he's thinking about it and then he rolls. The opposite way that he wanted to go. He looks very confused and somewhat upset at this. He'll learn though.

Here Comes the Airplane!!!

I'm coming out, so you better get this party started!! No really, I am coming out to Salt Lake!!
Aren't you all so excited!! As an added bonus, you'll receive a free visit from Brady! Serwiously, Pom Pom, I'm about to pee my pants. Now, I haven't booked my flight yet, but I will before sunrise on Saturday. So if anyone has anything special going on that you might like me to be there for let me know and I may be able to extend a day or two. The firm, but not set in concrete dates are October 8-October 25. I am going to be back home for Halloween, no ifs, ands or buts. So start planning now because those 17 or so days are going to fly by and I'll be back in Arkansas before you know it.

Let me know of any special events that should not be missed out on while visiting my homeland. 55 days and counting....

*A note about our loving Carl. He will not be able to make it to Utah due to his studies. I will miss him deeply. I know that it's just not the same without him there by my side. But let me assure you, he will be there in spirit.

Day 10

The Crock Pot

I would like to thank this wonderful appliance for making hearty homemade meals so easy and delicious. I can cook up a wonderful lasagna without precooking the noodles. Also, I can set it up in the mornings and not really worry about dinner until later. And, it's only one dish to put into the dishwasher! Beautiful!

Here is a recipie that my momma shared with me to the lasagna. I find it very very good.

Slow Cooker Lasagna

Ingredients

8 Lasagna noodles, uncooked
1 lb Ground beef
1 t Italian seasoning
1 20-oz Jar spaghetti sauce
1/3 c Water
15 oz Ricotta cheese
2 c Shredded mozzarella cheese

Preparation

Break noodles to fit in pot. Place half of the noodles in bottom of greased slow cooker. Brown beef and drain. Stir Italian seasoning into meat and spread half over the noodles in cooker. Layer half of the sause and water, half of the ricotta cheese, and half of mozzarella cheese over beek. Repeat layers. cover and cook on low heat for 5 hours.

I like to add thawed-frozen spinach, sauted mushrooms, olives, green peppers and whatever other lasagna-friendly veggies I have on hand.

This is really good to make up after church. Just cook on low for 1 hour, high for 1 hour and then on low for the remaining time. Watch it though, cuz it may burn. Or that could just my cooker.

Day 9

Bug Repellent

Ahh, what a wonderful thing when you live in mosquito-ville. Granted in order for it to be effective, one must apply it BEFORE entering the hazardous zone. On Saturday we went to see the Dixon Gallery and Gardens in Memphis. I learned my lesson about those pesky flying devils. I applied the devil-deterrent before walking around a lake on Monday and VOILA!! no bites!! It's amazing. Thank you SC Johnson for providing us with this miraculous product to prevent us from going itch-crazy.
